Pistachios are sometimes called green almonds for their distinctive appearance, and in China they are known as "nuts of happiness" — a name that reflects their pleasurable flavour as much as their mood-supporting nutrient profile. They are the seeds of the pistachio tree, enclosed in a greyish hard shell with characteristic green flesh. Their flavour and aroma are immediately recognisable. Where Do Pistachios Come From?

The pistachio family includes several distinct species. The true pistachio (Pistacia vera) is cultivated in Asia Minor, Central Asia, the United States, and southern Europe. Pistachios also stand out for their protein and fibre content compared to most other nuts, as well as for an unusually high concentration of carotenoids. The Polish Society of Gastroenterology, Hepatology and Paediatric Nutrition actually recommends introducing potentially allergenic foods including nuts even from six months of age, as early exposure helps the immune system develop tolerance. For infants, ground pistachios are appropriate; whole pistachios can be offered safely from around three years of age.
